Abstract

Cocoa is one of the most demanded products worldwide, noted for its characteristics. It is a significant input in the confectionery industry, especially in the manufacture of chocolate in the pharmaceutical industry, among others. This requires many actors who must interact to achieve its production and face peculiar barriers to its operation. This research seeks to group the studies carried out on the management of the cocoa supply chain and, from this point, highlight the main contributions that have been concluded in this field of study. Around 30 publications regarding the cocoa supply chain were reviewed using ten virtual platforms. Once the contributions of the existing literature have been identified, a theoretical model of the supply chain is proposed, identifying actors, processes, and other elements that comprise the cocoa supply chain.
